Meal Plan Week 2


This week's meal plan is full of delicious variety from all over the world. Asian, Greek, Italian, Indian, and American dishes keep your meal plan from being bland. We have two low-carb meals and two meatless meals so you can adjust according to your preferences.

  • I have been craving wings ever since last week's buffalo wing meal. They were so good! This week I'm using the leftover buffalo sauce to try these crispy drumsticks. 
  • I'll be doubling the recipe and serving with fresh cut celery. 
2. Simple Sesame Noodles, Stir Fry Vegetables, Lemon Pepper Chicken
  • These noodles from Pioneer Woman are excellent. I've tried other sesame noodle recipes and they are all way too hot! These have the perfect amount of spice for my palate. You can adjust more or less by changing the amount of hot chili oil or adding chili flakes for extra spice and texture.
  • I usually just by a frozen bag of stir-fry vegetables and throw in leftover vegetables from the fridge. It makes it so much easier than thinking about all the extra vegetables I have to buy. Some things I'll throw in this week: broccoli, bell pepper, and onion.
  • For Lemon Pepper Chicken, just throw it in a pan of warm oil after a generous sprinkle of lemon pepper seasoning to both sides. Cook each side about 5-6 minutes depending on thickness.
  • You could really put whatever you want in your gyro. I happen to have a pound of ground pork and ground turkey I'll be mixing together to form meatballs. 
4. Eggplant Parmesan and Caesar Salad
  • This is a simple meatless dish that can be made ahead and frozen for use another day. 
  • I'll serve this with a simple Caesar salad: romaine, croutons, shredded Parmesan, and dressing.
  • I love a good lentil stew. You can serve this thick over rice, or keep it low-carb and add more water, broth, or coconut milk to make it more of a soup. 
  • These are white people enchiladas. You will definitely not find these in mexico. It's a classic from my childhood and super easy. 
  • Serve with refried beans, buttered corn, and/or salad. 
7. Pepperoni Pizza and Spinach Salad
  • Our house loves more of a thinner crust on our homemade pizza and this recipe is perfect for us. 
  • Serve with a Spinach Salad: Spinach, feta cheese, red onion, strawberries.
