Banana Muffins for Picky Eaters

This banana bread recipe has served me well for years. It's easy enough on it's own and you can add whatever you want to make them even better. My family doesn't like nuts, and usually likes things pretty plain. I usually stick to the main ingredients and add in some chocolate chips. This morning I snuck in some wheat germ to make them a little healthier even though, lets be honest, a full cup of sugar does not make these super healthy. But they ARE delicious. So there's that. And you really couldn't tell the difference with a little added wheat germ.

So if you like things delicious and plain and simple, just add the main ingredients and chocolate chips. Don't be afraid of the sugar either. They help to make the muffin crusts nice and golden brown. But if you want to lessen the amount of sugar or replace it with stevia or honey, be my guest.

Banana Muffins for Picky Eaters
Ingredients
1/2 C butter softened
1 C sugar
2 eggs
3 ripe bananas
1 3/4 C flour
3/4 tsp baking soda
1/2 tsp salt

Optional Add-ins:
2 TB ground wheat germ (read about the benefits here)
1 C chocolate chips
1/2 C walnuts finely chopped
1 tsp cinnamon
1/2 tsp vanilla extract

1. Mix the butter and sugar together in a stand mixer until you have a nice creamy mixture.
2. Add eggs and bananas to butter/sugar and mix well. (If adding vanilla, add here.)
3. Add flour, baking soda, and salt to the mixture. (If adding wheat germ, and/or cinnamon, add here.)
4. Mix well, approximately 2 minutes.
5. Stir in chocolate chips and/or walnuts if you are adding them.
6. Scoop your mixture into greased muffin tins or line your muffin tins with muffin cups.
7. Bake at 350° for 15-20 minutes

If you prefer banana bread, a small bread pan should bake for about 30+ minutes, a large bread pan should bake for about 60+ minutes.
